Garlic Black Bean Chicken
Ingredients:
1.5 lbs chicken breast, tenders or thighs cut up into bite size pieces
2 Tbsp light oil or as much as you need, I use canola but sesame is good too
2 tsp each minced garlic and minced ginger – I use the packaged minced type in the produce department. You will cook the chicken and the veggies separately in it, so it depends on how much of each you like.
10-12 C cut veggies – I use chunks of colored peppers, white onions, broccoli and mushrooms. Or if I’m feeling lazy, I use Costco stir fry veggies
Sauce:
Mix together and set aside:
½ C chicken broth
2 Tbsp soy sauce
4 tsp Sugar
1.5 Tbsp corn starch
3 Tbsp black bean sauce.
Directions:
Stir fry chicken in oil & 1 tsp each garlic & ginger. Cook most of the way and set aside on paper towels. You will cook it more later. Stir fry veggies in the rest of the garlic & ginger for a few minutes, add more oil if needed. Lower heat and add chicken & sauce. Toss and stir up and continue cooking until veggies are desired crispness. I usually turn it down and put a lid on it so it steams somewhat to cook faster.
